It's been a while since I baked a new batch of cookies as the chocolate chip ones always go down so well! But since buying a tube of Waitrose Cooks' Homebaking freeze dried raspberries I have been dying to try them out in cookies. So this past weekend I made some gluten free dark chocolate chip cookies that I added the raspberry bits too. I loved how they turned out!
The gluten free Raspberry & Dark Chocolate chip cookies have a lovely rich cocoa flavour, crisp exterior and a tender gooey chewy centre with chips of dark chocolate and zingy raspberry pieces.
To get my cookies to be roughly the same size I weighed out the dough into 22gram balls.
