White Chocolate & Cranberry Fudge Recipe

Hello lovelies! Hope you are all well. I have had a crazy couple of months what with Christmas and celebrating my 40th Birthday in Las Vegas last month. But I am pleased to be back here with loads of new gluten free recipes, craft tutorials and of course lots of new Spring inspiration from interiors to fabrics...

Today I am kicking the week off with a really easy simple fudge recipe that doesn't require a thermometer and can be made in less than 10 mins! I made it for Christmas gifts but with Valentine's day just around the corner it would be a great gift for your loved ones.

Here's my simple gluten free White Chocolate & Cranberry Fudge Recipe...

White Chocolate & Cranberry Fudge

  1. Line a small square pan with foil

  2. Place double cream and white chocolate in a microwave bowl

  3. Microwave on high heat for 30 sec intervals, stirring between each session until all the chocolate has melted

  4. Fold in the cranberries and vanilla extract till well combined

  5. Pour the mixture into the tin and flatten with spatula

  6. Refrigerate for about half an hour until fudge has set

  7. Remove the fudge from the tin and cut into even squares

  8. Serve at room temperature


White Chocolate & Cranberry Fudge

  • 60ml double cream

  • 340g white chocolate (chopped coarsely)

  • 1 tsp vanilla extract

  • 100g cranberries (dried)
