Turkish Delight recipe

I am still running around trying to get everything ready for Christmas, I always wish I had started earlier but hey ho! So today I am just popping in to share my turkish delight recipe...

My Dad loves turkish delight and since the age of about 10 I have always bought him a box for Christmas along side other gifts. But this year I was determined to make most of my gifts so for the first time I made him Turkish Delight. It is however not the traditional turkish delight (Lokum) as it contains gelatine.

I have of course had to try some and it is yummmy! Perhaps next time I will have the courage to try making Turkish Delight the traditional way...

I have packaged the homemade turkish delight up in small gold cardboard boxes from Ikea and used pink and white glassine paper to separate the layers. Tied the boxes with ribbon and added gift tags with glued paper glittery stars on. Now I must go and package up all my homemade fudge!

Turkish Delight

  1. Lightly grease a 20x25cm baking tin with sunflower oil

  2. Place the gelatine, water and rose water in a large heavy-based pan and mix well.

  3. Add the sugar and stir.

  4. Stir using a wooden spoon over low heat until sugar and gelatine has dissolved

  5. Now turn up heat to medium and bring mixture to a boil, without stirring.

  6. Reduce the heat and simmer for 20-25 minutes.

  7. Remove from heat, stir in a few drops of food colouring and leave to cool for 3-4 minutes.

  8. Pour mixture into prepared pan.

  9. Leave to set for 24 hours.

  10. Mix the sieved icing sugar and cornflour together in a small bowl

  11. Dust your chopping board with a little icing sugar and cornflour

  12. Turn out turkish delight on to chopping board and cut into squares

  13. Toss the cut pieces of turkish delight in the icing sugar and cornflour mix

  14. Store in an airtight container between layers of greaseproof paper


Turkish Delight

  • sunflower oil (for greasing tin)

  • 25g powdered gelatine

  • 255ml water

  • 4 tsp rose water

  • 450g caster sugar

  • 1 drop pink food colouring

  • 3 tbsp icing sugar

  • 1 tsp cornflour
