Do you have a few peppermint canes left from Christmas? Why not use them to coat these delicious creamy peppermint infused chocolate truffles. They are super easy to make and make a lovely gift or sweet treat for after dinner.
Here's my recipe for Peppermint Chocolate Truffles.
Peppermint Chocolate Truffles
Place the chocolate drops and cream in a medium sized saucepan on a medium heat.
Stir until chocolate has completely melted and has a smooth texture.
Remove from heat and whisk in peppermint extract, until you have a smooth consistency.
Pour into small bowl and refrigerate for about 1 1/2 hours, or until set.
Scoop tbsp of chocolate mix into your hand and roll into a ball shape.
Roll chocolate truffle in crushed candy canes and place in tiny cupcake case. Continue till all the mixture has gone
Refrigerate to store, for up to a week (but best served at room temperature).
