Mini cherry panna cotta

I love making mini desserts as they really make my guests smile. My personal favourite has to be Panna Cotta! So this year I made cherry flavoured ones...

The ultimate luxuriously rich vanilla cream panna cotta made with a blend of double cream, milk, butter and sugar with a juicy cherry compote.

Method

Panna cotta

  1. Place cream and sugar in a small saucepan and gently bring to the boil

  2. Remove from heat and stir in vanilla paste

  3. Remove the gelatin leaf from the water and add to cream mixture and stir until gelatine dissolves

  4. Pour mixture into jars and leave to set in the fridge

Cherry compote

  1. Place Cherry puree and sugar in a small saucepan and gently bring to the boil

  2. Remove from heat and add just the gelatin leaf into cherry mixture and stir until gelatine dissolves

  3. Pour over the top of the chilled panna cotta and leave in fridge to set

Ingredients

Panna cotta

  • 300g double cream

  • 30g caster sugar

  • 1 gelatine leaf (soaked in a bowl of cold water)

  • 1 tsp vanilla (paste)

Cherry compote

  • 90g cherries (pureed)

  • 30g caster sugar

  • 1 gelatine leaf (soaked in water)
