Mango yogurt popsicles

Last week I made fruits of the forest yogurt popsicles, but I wanted to offer my guests some variety in the frozen treats so this time I went for more of a tropical flavour. A layered popsicle of mango yogurt and mango coulis.

These take a little longer to make than the solid flavours, as you need to wait for the layers to freeze or almost freeze before adding the next layer. But I love how they look and taste, so worth the extra effort!

Method

Mango yogurt popsicles

  1. Pour a third of the mango coulis into the moulds. Place the moulds in the freezer and freeze for half an hour.

  2. Pour a third of the mango yogurt into the moulds. Place the moulds in the freezer and freeze for half an hour.

  3. Pour a third of the mango coulis into the moulds. Place the moulds in the freezer and freeze for half an hour.

  4. Push a wooden lolly stick into the coulis, Pour a third of the mango yogurt into the moulds. Place the moulds in the freezer and freeze for half an hour. Repeat above steps till you have filled the moulds. Place the moulds in the freezer and freeze for several hours

  5. When the lollies are ready to eat briefly dip the moulds in warm water and then carefully pull the lollies from the moulds.

  • 500g mango yogurt

  • 150ml mango coulis
