Jungle themed gluten free birthday cake

For my niece Molly's first birthday, I made her a fruit flavoured coloured tiered cake decorated with pretty pastel jungle inspired decorations to match the pretty pastel jungle bench I hand painted and made a cushion cover for.

The bottom layer is kiwi, the centre banana and the top layer is strawberry. Ther are sandwiched together with a creamy milk chocolate buttercream.

Method

Strawberry gluten free layer cake

  1. Preheat oven to 160-180 deg C (325-350 deg F).

  2. Lightly grease and line 23cm (9 inch) spring form cake tin with paper.

  3. Beat butter, honey and sugar with an electric mixer until the mixture turns a pale colour.

  4. Lightly beat eggs.

  5. Stir in sieved flour, bicarbonate of soda, baking powder, eggs, strawberries, milk, vanilla extract and food colouring till mixed thoroughly.

  6. Spoon into cake tin.

  7. Bake for 40-45 minutes until cooked or a skewer comes out clean.

  8. Place cake on a wire rack to cool.

Banana gluten free layer cake

  1. Preheat oven to 160-180 deg C (325-350 deg F).

  6. Spoon into cake tin.

  7. Bake for 40-45 minutes until cooked or a skewer comes out clean.

  8. Place cake on a wire rack to cool.

Milk chocolate buttercream

  1. Melt chocolate drops in a microwave on low power, or in a bain marie on the hob

  2. Whip butter until light and fluffy, gradually beat in icing sugar

  3. Add vanilla extract and continue to beat

  4. Fold in melted chocolate and milk, till you have an even consistency

To decorate

  1. Using a wire cake cutter trim off top of all three cakes.

  2. Sandwich cakes together using chocolate butter cream.

  3. Lightly cover cake in strawberry jam.

  4. Lightly dust surface with icing sugar, knead icing till soft and pliable.

  5. Roll out white icing using rolling pin to be a bit bigger than the size of your cake so that you can easily cover the sides.

  6. Use a rolling pin to help support the weight of the icing as you lift it over your cake. Once in place begin smoothing and firming the icing from the centre of the cake, working out towards the edges and down the sides to give a smooth, even finish.

  7. Trim off any excess icing with a sharp knife.

  8. Lightly dampen undersides of the cut leaves with water using a small paintbrush and place 10 of them around the top edge and 10 around the base.

  9. Lightly dampen undersides of the jungle animals with water using a small paintbrush and place around sides of cake

  10. Lightly dampen undersides of the blossom flowers with water using a small paintbrush and place around cake

  11. Lightly dampen undersides of the monkey and letters with water using a small paintbrush and place on top of the cake

  12. Make a candle holder using the fondant flowers and place on top of the cake

  13. I also added green sanding sugar around the monkey decoration

Strawberry gluten free layer cake

  • 125g butter (unsalted, at room temperature)

  • 2 tbsp honey

  • 200g caster sugar

  • 2 large eggs

  • 190g gluten free plain flour

  • 1 tsp bicarbonate of soda

  • 1.5 tsp baking powder

  • 150g strawberries (fresh, chopped)

  • 40ml milk (semi-skimmed)

  • 0.5 tsp vanilla (extract)

  • 6 drop food gel (pink)

Banana gluten free layer cake

  • 125g butter (unsalted, at room temperature)

  • 2 tbsp honey

  • 200g caster sugar

  • 2 large eggs

  • 190g gluten free plain flour

  • 1 tsp bicarbonate of soda

  • 1.5 tsp baking powder

  • 1 large bananas (fresh, chopped)

  • 40ml milk (semi-skimmed)

  • 0.5 tsp vanilla (extract)

  • 6 drop food gel (pink)

Kiwi gluten free layer cake

  • 125g butter (unsalted, at room temperature)

  • 2 tbsp honey

  • 200g caster sugar

  • 2 large eggs

  • 190g gluten free plain flour

  • 1 tsp bicarbonate of soda

  • 1.5 tsp baking powder

  • 2 medium Kiwi (fresh, skinned, chopped)

  • 40ml milk (semi-skimmed)

  • 0.5 tsp vanilla (extract)

  • 6 drop food gel (pink)

Milk chocolate buttercream

  • 100g butter (white, unsalted, at room temperature)

  • 75g milk chocolate (chips)

  • 200g icing sugar (sieved)

  • 1 tsp vanilla (extract)

  • 1 tbsp milk (semi skimmed)

To Decorate

  • 20 fondant jungle leaves

  • 30 small fondant blossom (pink, yellow, lavender)

  • 1 fondant monkey in leaves

  • fondant jungle animals

  • fondant letters

  • strawberry jam

  • Sanding sugar (green)
