Milk Chocolate


Ideally I like to bake with milk chocolate that has a minimum of 35% cocoa solids and 20% milk solids and is made using Fairtrade cocoa beans.

I am rather partial to milk chocolate, and love to use it in creamy truffles mixed with fruity flavours like apple & liqueurs like Baileys. Milk chocolate as the name suggests is solid chocolate where some of the cocoa solids are replaced with milk in the form of milk powder, liquid milk or condensed milk, which gives it a sweeter texture and a smoother texture to dark chocolate.

Ideally, milk chocolate should be stored in a slightly cool, dry, dark place.
