Choose bright, unblemished lemons that feel heavy for their size. Lemons can be bought waxed or unwaxed. Choose unwaxed lemons if you’re planning to use the zest.

Lemons are an acidic citrus fruit that is oval in shape, with a shiny yellow skin and bitter but zingy flavour. Lemons contain a high level of Vitamin C but have a low sugar content and are one of the most versatile fruits around with a refreshing flavour that can be used in both sweet and savoury dishes.

Lemon zest is an important ingredient in its own right and contains essential oils that lend a dish perfume as well as flavour.
Use a grater or a zester to remove the zest, taking care not to remove any of the white pith along with it, as it’s very bitter.

Lemons don't ripen after being picked, so are best stored in the refrigerator.
