Gluten free Victoria sandwich heart cake recipe

For Valentine's day this year I made pretty heart shaped gluten free Victoria sandwich cakes with strawberry jam and fresh cream. Super easy to make and easy to adjust for any occasion, just bake them in different shaped silicone cases...

Gluten free Victoria sandwich cake

  1. Preheat oven to 165C/325F

  2. Grease letter mould and place on baking tray

  3. Beat butter and sugar until light and fluffy

  4. Beat in eggs one at a time

  5. Beat in vanilla essence

  6. Fold in the sifted flour and baking powder

  7. Slowly beat in milk

  8. Spoon or pipe cake mixture into cases

  9. Bake for about 15 mins until skewer comes out clean

  10. Leave to cool in moulds

  11. Then turn out cakes onto a chopping board

To decorate

  1. Using a bread knife, cut cakes in half width ways

  2. Place bottom halves of cake back in moulds

  3. Divide jam between the cakes and spread evenly across cakes

  4. Whip the cream until stiff peaks form and fill piping bag fitted with a star nozzle

  5. Pipe a layer of cream on top of jam covered cakes

  6. Place top half of cakes on top of piped cream

  7. Lightly dust with sieved icing sugar


Gluten free Victoria sandwich cake

  • 150g butter (unsalted, at room temperature)

  • 150g caster sugar

  • 2 large eggs (at room temperature)

  • 1 tsp gluten free baking powder

  • 150g gluten free self raising flour

  • 3 tbsp milk
