Flourless chocolate cupcakes

  1. Heat oven to 160C (fan 150C)

  2. Line cupcake tray with foil cases

  3. In a bain marie or double boiler melt the butter, vanilla and chocolate

  4. Remove from heat and stir in cocoa powder, sugar and beaten eggs

  5. Pour the batter evenly between the cases in tin

  6. Bake for about 20-25 mins until cakes bounce back when lightly pressed

  7. Place cake on rack to cool

White chocolate mousse

  1. Place cream in a bowl with a pinch of caster sugar and whip until soft peaks form

  2. Melt 200g of white chocolate drops in the microwave on a low heat or in a bain marie on the hob, continuously stirring so as not to overheat

  3. Stir melted chocolate into whipped cream until you have an even coloured mousse

To decorate

  1. Pipe mousse on to top of cooled cakes

  2. Sprinkle with bronze crunch and decorate each cupcake with a edible chocolate spoon

  3. Leave in fridge until ready to serve

  • 120g butter (unsalted)

  • 1 tsp vanilla (extract)

  • 120g dark chocolate (drops)

  • 50g cocoa powder

  • 150g caster sugar

  • 3 large eggs (beaten)
