Gluten free triple chocolate cheesecake cupcakes

The lovely peeps at Lily O'Briens, the famous Irish chocolate company sent me a kilo of dark chocolate drops to bake my favourite chocolate sweet treat with. So after much thought and nibbling on a few of the delicious chocolate buttons, I decided to make triple chocolate cheesecake style cupcakes. The base is a rich flourless chocolate cake with a smooth creamy cheesecake centre topped with a swirl of chocolate mousse! So they are naturally Gluten Free.

My brother in law who is a chocaholic said they were his favourite sweet treat I had ever made! Praise indeed

Method

Flourless chocolate cupcake

  1. Heat oven to 160C (fan 150C)

  2. Line baking tray with cases

  3. In a bain marie or double boiler melt the butter, vanilla and chocolate

  4. Remove from heat and stir in cocoa powder, sugar and beaten eggs

  5. Divide the the batter between the cases

  6. Bake for about 15-20 mins until cakes bounce back when lightly pressed

  7. Place on rack to cool

Chocolate cheesecake

  1. Melt chocolate drops in a microwave on low power, or in a bain marie on the hob, leave to one side to cool

  2. Beat cream cheese and icing sugar till well combined, leave to one side

  3. Whip cream until soft peak form

  4. Add melted cooled chocolate and cocoa powder and mix until well combined

  5. Fold cream/chocolate mix in to cream cheese mixture

  6. Spread on top of cooled cakes and place in freezer to set, while you make the mousse

Chocolate mousse

  1. Place cream in a bowl with a pinch of caster sugar and whip until soft peaks form

  2. Melt 200g of dark chocolate drops in the microwave on a low heat or in a bain marie on the hob, continuously stirring so as not to overheat

  3. Stir melted chocolate into whipped cream until you have an even coloured mousse

  4. Pipe mousse on to top of cheesecake

  5. Place in fridge to set

  6. Decorate with edible gold sequins for a decadent finish

  7. Leave in fridge until ready to serve

Flourless chocolate cupcake

  • 120g butter (unsalted)

  • 1 tsp vanilla (extract)

  • 120g dark chocolate (drops)

  • 50g cocoa powder

  • 150g caster sugar

  • 3 large eggs (beaten)

Chocolate cheesecake

  • 150g dark chocolate (drops)

  • 200g cream cheese

  • 120ml double cream

  • 55g icing sugar

  • 2 tbsp cocoa powder (mixed with a little hot water)

Chocolate mousse

  • 250g double cream

  • 200g dark chocolate (drops)

  • pinchcaster sugar
