Gluten free Tiffin Recipe

Yesterday I showed you how to make the white chocolate ducks on blue water that I used to decorate my gluten free tiffin. So it only seemed fitting that I should share with you my gluten free tiffin recipe. But before I do I thought I would share what a Tiffin is, for those that have not heard of it...

'A Tiffin a no-bake cake like sweet treat that is composed of crushed biscuits, golden syrup, dried fruit, nuts and chocolate or cocoa powder and sugar and is often covered with a layer of chocolate.'

I love this new recipe and will definitely be making it again. I used two kinds of crushed biscuits, the traditional digestive and amaretti. For the dried fruit I used raisins and glace cherries and used dark and milk chocolate. I placed mine in silicone cupcake cases which worked really well as they easily peeled away from the cases leaving perfect sized pieces. You can of course use my gluten free tiffin recipe to make it in the traditional way, one big slab that is then cut into squares or slices. To make it this way just use a rectangle cake tin lined with clingfilm.

Method

Gluten free Tiffin

  1. Place digestives in a bag and crush by rolling a rolling pin back and forth over the bag until you are left with chunks and crumbs.

  2. In a medium saucepan on a low heat, melt the dark chocolate, butter and golden syrup. Stirring continuously so you don't burn the chocolate.

  3. Once melted remove from heat and add the crushed digestive biscuits, half the milk chocolate, raisins, pecans and cherries. Crumble the amaretti biscuits into the mix and stir until well combined.

  4. Pour the mixture into the cupcake cases (or prepared pan) and press down flat with the back of a spoon. Place in the fridge to cool.

  5. Melt the remaining milk chocolate and pour over the top of the tiffins, add decorations and place in fridge overnight.

  6. Serve at room temperature.

  • 100g gluten free digestive biscuits

  • 100g amaretti biscuits (gluten free)

  • 300g dark chocolate (chopped)

  • 100g butter (unsalted)

  • 150g golden syrup

  • 100g pecans (chopped)

  • 100g raisins

  • 100g glace cherries (chopped)

  • 200g milk chocolate (chopped)
