Gluten free strawberry dolly mix cupcakes

For my Sisters baby shower I made some cute gluten free strawberry dolly mix cupcakes...

A vanilla cupcake swirled with strawberry jam and dried strawberries for a double hit of fruity fun, decorated with vanilla buttercream and dolly mix candy!

Method

Strawberry dolly mix cupcakes

  1. Preheat oven to 165C/325F

  2. Line muffin tray with paper cases or baking tray with silicone cases

  3. Beat butter, sugar, flour, eggs, milk and vanilla extract in a bowl with an electric mixer until the mixture turns a pale colour

  4. Fold in the blended blackberries

  5. Divide mixture between cases

  6. Bake for about 12-15 mins until cakes bounce back when lightly pressed

  7. Place cakes on rack until cool

Vanilla buttercream

  1. Using the paddle attachment on your food mixer, beat the butter and vanilla essence until soft

  2. Add half of the icing sugar and beat until smooth

  3. Add the remaining icing sugar and beat until creamy and smooth

To decorate

  1. Fill piping bag with cream cheese frosting and pipe in peaks on top of the cakes

  2. Place three Dolly Mix candy in centre of each cupcake

  • 125g butter (unsalted, at room temperature)

  • 150g caster sugar

  • 150g gluten free self raising flour (sifted)

  • 2 large eggs

  • 60ml milk (semi skimmed)

  • 0.5 tsp vanilla (extract)

  • 150g strawberries (dried)

  • 2 tbsp strawberry jam

Vanilla buttercream

  • 225g icing sugar (sifted)

  • 1 tsp vanilla (extract)

  • 225g butter (unsalted)
