Gluten free shortcrust pastry

Gluten free and wheat free all purpose shortcrust pastry, perfect for sweet or savoury baking.

Method

Gluten free shortcrust pastry

  1. Place all the dry ingredients in a large mixing bowl, add butter and use your hands to mix until the mixture resembles fine breadcrumbs. Or, use a food processor to save a bit of time!

  2. Lightly beat your egg with 1 tablespoon of water

  3. Make a well in the centre of your dry ingredients and add the egg and water.

  4. Combine mixture with a wooden spoon, then knead by hand to form a ball of dough. (Unlike regular pastry, gluten free pastry benefits from being handled)

  5. Cover with cling film (saran wrap) and place in a refrigerator for at least an hour before continuing.

  • 200g gluten free plain flour

  • 1 tsp xantham gum

  • 1 pinch salt

  • 100g butter

  • 2 tbsp water (cold)

  • 1 large eggs
