Gluten Free Rocky Road Recipe

I am loving my new brownie pan from Tala and am making lots of sweet squares of gluten free yumminess! So today I wanted to share with you my really easy quick gluten free rocky road recipe which I made in my brownie pan... There are so many variations, you can add dried fruit, nuts and biscuits it really is up to you, I used glace cherries, raisins and gluten free digestive biscuits in mine along with the requisite marshmallows!

Gluten free Rocky Road

  1. Grease your brownie pan and leave to one side

  2. Place digestives in a bag and crush by rolling a rolling pin back and forth over the bag until you are left with chunks and crumbs.

  3. In a medium saucepan on a low heat, melt the dark chocolate, butter and golden syrup. Stirring continuously so you don't burn the chocolate.

  4. Once melted remove from heat and add the crushed digestive biscuits, raisins, marshmallows and cherries. Stir until well combined.

  5. Pour the mixture into the brownie pan (or prepared pan) and press down flat with the back of a spoon. Place in the fridge to cool.

  6. Serve at room temperature.

To decorate

  1. Sieve icing sugar over the top of them before serving at room temperature.


Gluten free Rocky Road

  • 200g dark chocolate (broken into squares)

  • 3 tbsp golden syrup

  • 135g butter (unsalted)

  • 100g marshmallows (mini)

  • 175g gluten free digestive biscuits

  • 25g glace cherries

  • 25g raisins
