I love cheesecake and when I knew I was having friends and family over for a BBQ a couple of weeks ago it was the perfect opportunity to make a lovely large gluten free no bake fresh strawberry cheesecake. Here is my Gluten Free No Bake Strawberry Cheesecake recipe...
1 23cm cheesecake
Butter and line a 23cm loose-bottomed tin with baking parchment.
Put biscuits in a food processor until finely ground
In a small saucepan, melt the butter, remove from heat and stir in biscuit crumbs
Place the strawberries, lime juice and caster sugar in food processor or blender till smooth, leave to one side.
Whip double cream until stiff peaks form
In a separate bowl whisk cream cheese, mascarpone cheese and icing sugar until smooth
Pour in strawberry mixture and whisk till well combined.
Fold whipped cream into strawberry cream cheese mix
Spoon the strawberry cheesecake mixture onto the biscuit base, working from the edges inwards and making sure that there are no air bubbles. Smooth the top of the cheesecake down with the back of a dessert spoon or spatula.
Cover cheesecake in clingfilm and place in fridge for 6 hours or overnight to set. Remove from freezer at least 20-30 minutes before serving.
