Gluten free monster cake pops recipe

Morning lovelies! Yesterday I showed you my gluten free rainbow monster cakes I made for my nephews monster themed third birthday party. I had some layers of cake left over so I crumbled them up and made monster cake pops that my sister added to the party bags along with the cutest felt monsters she had handmade.

Vanilla cream cheese frosting

  1. Beat the butter until super soft and creamy

  2. Add the cream cheese and vanilla extract, beat until well combined

  3. Add the sifted icing sugar and beat until you have a soft, well combined icing

To decorate

  1. Crumble up the cooked cake into a bowl till you have fine crumbs.

  2. Add a tablespoon of cream cheese frosting and mix, continue adding cream cheese till you have a dough like consistency.

  3. Place mixture into fridge to firm up, making it easier to work with.

  4. Line a baking tray with baking paper.

  5. Using electric scales, measure out 25g of mixture and roll into a ball. Place on baking sheet. Repeat until all mixture has gone.

  6. Place candy melts into a microwavable bowl. Heat for 1 min on medium. Stir and continue heating in 30 second intervals until candy is fully melted.

  7. Push one lollipop stick into the melted candy melts and then into one cake. Place cake pop in holder to set. Repeat with remaining cake balls.

  8. Cut jelly diamonds and jelly worms in half. Dip the cut ends into the melted candy melts and attach to the first cake pop. Place back in holder and repeat with remaining cakepops.

  9. Paint entire cake pop in melted candy pops and push candy eyeball into centre of cake pop.

  10. Push sugar dots into melted candy before the candy melts set. Leave to set.


Vanilla cream cheese frosting

  • 200g cream cheese

  • 500g icing sugar

  • 70g butter (unsalted, at room temperature)

  • 1 tsp vanilla (extract)
