Gluten free mini apple & blackberry cakes

My lovely neighbours gave me a bag of cooking apples from the tree in their garden. So with all the yummy apples and blackberries, I have started baking them in to sweet treats.

First I decided to make mini blackberry and apple cakes, giving me a chance to finally use my 12 cup mini sandwich tin.

I am in love! they are beautifully moist fruit cakes with a hint of cinnamon...

Method

Gluten free mini apple & blackberry cakes

  1. Preheat oven to 140-160 deg C

  2. Lightly spray your tins with cake release spray

  3. Beat butter and sugar with an electric mixer until the mixture turns a pale colour

  4. Gradually beat in eggs one at a time

  5. Beat in ground almonds and flour till well combined

  6. Wash, core and slice the apple into thin slices, put 12 slices to one side and cut the remaining slices into small pieces

  7. Stir the blackberries and small pieces of apple into the batter

  8. Divide mixture between the 12 cups in the tin

  9. Cut the 12 slices of apple put to one side in half and place two slices on to the top of each batter filled cup

  10. Top each cup with a small knob of butter, and a sprinkle of golden syrup sugar and cinnamon

  11. Bake for 25-30 minutes until cakes bounce back when lightly pressed

  12. Place cakes on a wire rack to cool

To decorate

  1. When cakes are completely cooled, dust with sieved icing sugar

Gluten free mini apple & blackberry cakes

  • 125g butter (unsalted at room temperature)

  • 125g caster sugar

  • 3 large eggs

  • 50g almonds (ground)

  • 100g gluten free self raising flour

  • 100g blackberries (fresh)

  • 1 apples (cooking)

  • 12 pinch golden syrup caster sugar (or golden caster sugar)

  • 12 pinch cinnamon (ground)

  • 12 butter (tiny cubes)

  • cake release spray
