Gluten Free Marzipan Star Topped Mince Pie Recipe

Looking for gluten free mince pies? Look no further, this is my tried and tested gluten free mince pie recipe. I make these every year and always several batches as these gluten-free mince pies keep well. So if like me, you suffer from wheat, gluten intolerance or know someone who is visiting over Christmas who does, you will love this recipe...

This year I was delighted to use my sponsor Tala's 12 cup shallow tin and fancy cutters to make these gluten free mince pies.

Tip: After years of making these, I now cut out the marzipan stars at least a day in advance of making my mince pies as I find the marzipan dries out enough so that when you bake these mince pies the star stays intact more.

  1. Place all the dry ingredients in a large mixing bowl, add butter and use your hands to mix until the mixture resembles fine breadcrumbs. Or, use a food processor to save a bit of time!

  2. Make a well in the centre of your dry ingredients and add the egg and water.

  3. Combine mixture with a wooden spoon, then knead by hand to form a ball of dough.

  4. Cover with cling film (saran wrap) and place in a refrigerator for at least an hour before continuing.

  5. Roll out marzipan to 5mm thick

  6. Cut out marzipan stars and leave to one side. If you let your marzipan stars dry for a while, they spread out less whilst cooking and you are left with a clearer looking star

  7. Preheat oven to 160-180 deg C (325-350 deg F)

  8. Lightly grease a 12 hole cupcake tin with butter.

  9. Roll out the pastry so it is about 2mm thick. The dough will hold together if well mixed and rolled between two sheets of baking paper.

  10. Cut out circles using a round or fluted pastry cutter.

  11. Now line the cupcake tray with pastry, and gently press into each hole.

  12. Spoon a heaped teaspoon of mincemeat into each case.

  13. Place snowflake marzipan on top and lightly press

  14. Cook in pre-heated oven for 10-15 mins

  15. Take out of tray and leave to cool slightly before placing mince pies on a baking rack to cool

  16. Dust with icing sugar.
