Gluten free lemon sugar cookie tree

A few years ago I made a sugar cookie tree, but it was very large, so when the lovely peeps at Tala sent me the star cookie cutter set, I thought they would be perfect for a elegant sugar cookie tree. I made my cookie dough with lemon zest so it had a lovely citrus taste. I love how it turned out. Here's how I made it...

Lemon sugar cookies

  1. Sift the flours into a medium bowl, stir in sugar

  2. Add the butter to the flour mix and rub together till the mixture resembles fine bread crumbs

  3. Make a well in the middle of the mix and add the syrup, egg and lemon zest

  4. Mix well until the mixture resembles a ball of dough

  5. Split the dough into two pieces, wrap the dough in cling film and leave in fridge for at least one hour

  6. Preheat oven to 160-180 deg C (325-350 deg F)

  7. Place a sheet of non stick parchment paper on your work surface, place one piece of dough on parchment

  8. Place another sheet of paper on top of dough

  9. Roll out dough so it is about 5mm thick

  10. Cut out stars

  11. Transfer to baking sheets

  12. Place unbaked cookies in fridge for 15 mins

  13. Repeat with second batch of dough

  14. Bake for 10-15 mins

  15. Place cookies on a wire rack to cool

To decorate

  1. When cookies are completely cooled

  2. Place one of the largest stars on your serving plate, pipe small peaks of icing at tip of each star, place silver ball in icing.

  3. Pipe a small amount of icing in the middle of the bottom cookie, place second large cookie on top, so that the stars are off set

  4. Repeat with the rest of the baked cookie stars, allow tree to dry completely half way through, so you have a stable stack

  5. Sieve icing sugar over the entire tree


Lemon sugar cookies

  • 350g gluten free plain flour

  • 100g gluten free self raising flour

  • 125g granulated sugar

  • 125g butter (unsalted, diced)

  • 125g golden syrup

  • 1 large eggs (beaten)

  • 1 lemons (zest)
