Gluten Free Lemon Iced Vanilla Sugar Cookie Tutorial

These gluten free vanilla sugar cookies are easy to make and make great shaped cookies that you can decorate in a multitude of ways. This past Christmas I made a whole bunch of star shaped vanilla sugar cookies that I decorated with a zesty lemon flavoured icing. The zesty lemon icing is easy to make, tastes great and dries shiny and hard making it perfect for packaged cookies. Use it to cover the cookies in icing or pipe individual details.

To decorate them with my zesty lemon icing I used the Tala icing pen which made drawing lines so much easier than a piping bag.

Method

Gluten free sugar cookies

  1. In a separate bowl, sieve together the flour, salt and baking powder, and set aside

  2. Beat butter and sugar in a bowl with an electric mixer until the mixture turns a pale colour

  3. Add the eggs and vanilla essence and whisk until combined

  4. Add the flour mixture and whisk until you have a smooth dough

  5. Wrap the dough in clingfilm and leave in fridge for one hour

  6. Preheat oven to 160-180 deg C (325-350 deg F)

  7. Lightly dust work surface with flour

  8. Roll out dough so it is about 1cm thick. Turn continually so dough does not stick to surface

  9. Cut out desired shapes with a lightly floured cookie cutter

  10. Transfer to baking sheets

  11. Place unbaked cookies in fridge for 15 mins

  12. Bake for 8-10 mins

  13. Place cookies on a wire rack to cool

Lemon Flavoured Cookie Icing

  1. In a small bowl place the milk, gradually stir in the icing sugar till smooth

  2. Beat in glucose syrup and lemon extract until icing is smooth and glossy.

  3. Divide icing into separate bowls and colour as desired using food paste colours

To decorate

  1. Spoon icing into Tala icing pen, and draw designs on to coookies

  2. Leave icing overnight to set

Gluten free sugar cookies

  • 227g butter

  • 390g gluten free plain flour

  • 200g granulated sugar

  • 2 large eggs

  • 0.5 tsp salt

  • 0.75 tsp baking powder

  • 2 tsp vanilla (extract)
