Gluten free Halloween blackberry cupcakes

To go my Halloween, "Think Pink" candy table I made some Gluten free blackberry cupcakes with swirls of creamy buttercream on top. I dresses them up in creepy spider web cupcake wrappers...

Method

Blackberry cupcakes

  1. Preheat oven to 165C/325F

  2. Line muffin tray with paper cases or baking tray with silicone cases

  3. Beat butter, sugar, flour, eggs, milk and vanilla extract in a bowl with an electric mixer until the mixture turns a pale colour

  4. Fold in the blended blackberries

  5. Divide mixture between cases

  6. Bake for about 12-15 mins until cakes bounce back when lightly pressed

  7. Place cakes on rack until cool

Vanilla buttercream

  1. Using the paddle attachment on your food mixer, beat the butter and vanilla essence until soft

  2. Add half of the icing sugar and beat until smooth

  3. Add the remaining icing sugar and beat until creamy and smooth

To decorate

  1. Fill piping bag with vanilla buttercream and pipe in peaks on top of the cakes.

  2. Sprinkle with black glitter and place a candy blackberry on top

Ingredients

Blackberry cupcakes

  • 125g butter (unsalted, at room temperature)

  • 150g caster sugar

  • 150g gluten free self raising flour (sifted)

  • 2 large eggs

  • 60ml milk (semi skimmed)

  • 0.5 tsp vanilla (extract)

  • 150g blackberries (blended)

Vanilla buttercream

  • 225g icing sugar (sifted)

  • 1 tsp vanilla (extract)

  • 225g butter (unsalted)
