Gluten free choc chip vanilla cupcakes

To go with yesterday's redcurrant and white chocolate cupcakes I also made choc chip cupcakes topped with chocolate dipped cherries to serve at my Olympic themed party.

Deliciously moist chocolate chip cupcakes with a whipped cream frosting, decorated with cherries dipped in indulgent dark chocolate.

Method

Choc chip vanilla cupcakes

  1. Heat oven to 170C (fan 150C)

  2. Line baking tray with cases

  3. In a food mixer, beat the butter, sugar, eggs and vanilla essence until light and fluffy.

  4. Stir in sifted flour, chocolate chips and milk

  5. Divide batter between the cases

  6. Bake for about 25 mins until cakes bounce back when lightly pressed

  7. Place cakes on wire rack to cool

Whipped cream frosting

  1. In a cold basin gently whisk the double cream and vanilla extract until it thickens.

  2. You must start slowly, increasing the strength carefully, to avoid your cream becoming buttery or curdling.

  3. Sprinkle icing sugar over whipped cream.

  4. Whip for roughly another 30 seconds or so to soft peaks form, or keep going to firm peaks if you want to pipe it.

  5. It is now ready to use, if not using immediately, cover and refrigerate.

To decorate

  1. Melt 200g of dark chocolate drops in the microwave on a low heat or in a bain marie on the hob, continuously stirring so as not to overheat

  2. Dip cherries into melted chocolate, place on baking paper and leave to set

  3. Fill piping bag fitted with a star nozzle with whipped cream frosting

  4. Pipe a swirl of whipped cream frosting on top of the cakes

  5. Adorn each cake with a chocolate dipped cherry

Choc chip vanilla cupcakes

  • 125g butter

  • 150g caster sugar

  • 2 large eggs

  • 0.5 tbsp vanilla (extract)

  • 185g gluten free self raising flour

  • 150g dark chocolate (drops)

  • 80ml milk

Whipped cream frosting

  • 250ml double cream

  • 2 tbsp icing sugar (sifted)

  • 2 drop vanilla (extract)

To Decorate

  • 100g dark chocolate

  • 12 cherries
