Gluten Free Cherry Cheesecake Truffle Recipe

Every Christmas I like to make handmade chocolate truffles for my friends and family changing up the flavours and trying new ideas. My favourite handmade chocolate truffles I made this past Christmas have to be the gluten free cherry cheesecake white chocolate truffles...

A lovely creamy cheesecake filling with a fruity cherry flavour, encased in a biscuit crumb, drizzled with white chocolate.

Method

Cherry Cheesecake Truffles

  1. Start by whipping the cream cheese, icing sugar and jam till smooth

  2. Melt the 200g of white chocolate in a bain marie or in a microwave on low power

  3. Slowly whisk the melted chocolate one tablespoon at a time to the cherry cheese mix until well combined

  4. Pour into small bowl and refrigerate for about 1 1/2 hours, or until set.

  5. Scoop tsp of cheesecake mix into your icing sugar coated hands and roll into a ball shape.

  6. Roll in crushed digestive biscuits and place in tiny cupcake case. Continue till all the mixture has gone.

  7. Place the biscuit crumb covered truffles in the fridge for a couple of hours to firm up.

  8. Melt the remaining white chocolate in a bain marie or in a microwave on low power. Spoon into a piping bag and trim the top off, drizzle white chocolate on to the top of the truffles. Leave to set.

  9. Refrigerate to store, for up to a week (but best served at room temperature).
