Gluten free caramel apple cheesecake

Hello lovelies!

For Halloween I wanted to serve cheesecake, but rather than serving one large cheesecake I made 12 small creamy vanilla cheesecakes. To give them a Halloween flavour, I wanted them to taste a little like caramel apples. So I topped them with a thin layer of Dulce de Leche caramel and decorated them with rose shaped apple pieces. The apples were a little fiddly to do but well worth the effort for the effect they have.

So as promised here is my gluten free caramel apple cheesecake recipe...

Vanilla cheesecake

  1. Place digestives in a bag and crush by rolling a rolling pin back and forth over the bag until you are left with crumbs

  2. In a small saucepan, melt the butter, remove from heat and stir in digestive crumbs

  3. Divide crumb mixture between the cases and press down lightly with the end of a wooden spoon or teaspoon

  4. Whip double cream until stiff peaks form

  5. In a separate bowl whisk cream cheese, mascarpone cheese, icing sugar and vanilla extract until smooth

  6. Fold whipped cream into cream cheese mix

  7. Fill biscuit based cases with cream cheese mixture

  8. Place in fridge for 6 hours to set

To decorate

  1. Place the water, lemon juice and sugar in a medium saucepan and bring to a boil. Remove from heat and cover with parchment paper.

  2. Core apples and using a sharp knife, cut all apples crosswise into thin slices and place into pan of syrup. Let the syrup cool completely, about 35 minutes. Cut slices into semicircles and wrap one slice into a cone shape to form a "bud." Then carefully wrap more slices around the bud at intervals till you have your required rose size. Place inside a small cupcake tin to set.

  3. Spoon 1/2 a tablespoon of Dulce de Leche caramel on to top of cheesecakes and spread with a spatula knife till the tops are flat. Place a apple rose on top and dust with icing sugar.


Vanilla cheesecake

  • 200g gluten free digestive biscuits

  • 100g butter

  • 300g cream cheese

  • 300g mascarpone cheese

  • 150g icing sugar

  • 1 tsp vanilla (extract with seeds)

  • 180ml double cream

To Decorate

  • 3 apples (red)

  • 500ml water

  • 200g Caster sugar

  • 1 lemons (juice)

  • 6 tbsp Dulce de Leche caramel
