Gluten Free Blackberry Oat Muffins Recipe

Hello lovelies! I hope you all had a lovely Christmas and a great start to your new Years. I was crazy busy right up to Christmas baking and making all my handmade gifts and after a short break I am back and looking forward to sharing all my gluten free bakes and makes. So first up is the gluten free blackberry oat muffins I made for Christmas morning...

If you want your muffins to be gluten free be sure to use Gluten free Oats as all other oats can contain traces of gluten!

I served mine with a dollop of greek yogurt, yummy!

Method

Gluten Free Blackberry Oat Muffins

  1. Preheat oven to 190C

  2. Line muffin tray with cases

  3. Put all the dry ingredients in a bowl and stir to mix well

  4. Add milk, eggs, oil and vanilla extract and mix till combined well

  5. Stir in blackberries

  6. Divide batter between the cases

  7. Bake for about 15-20 mins until muffins bounce back when lightly pressed

  8. Place on rack to cool

Gluten Free Blackberry Oat Muffins

  • 100g Gluten Free Oats

  • 125g gluten free plain flour

  • 85g caster sugar

  • 1 tbsp baking powder

  • 0.5 tsp salt

  • 200ml milk (semi skimmed)

  • 1 large eggs

  • 4 tbsp ground nut oil

  • 1 tsp vanilla extract

  • 150g blackberries
