Dark chocolate raspberry truffle recipe

Valentine's day is just around the corner so today I thought it would be the perfect time to share with you my dark chocolate raspberry truffle recipe...

Deliciously rich and smooth, these chocolate and raspberry truffles make a great edible gift to give to loved ones on special occasions

So that all my truffles are the same size I weigh each ball to around 22g and use the best quality dark chocolate I can afford.

Dark chocolate and raspberry truffles

  1. Place the chocolate and cream in a medium sized saucepan on a medium heat.

  2. Stir until chocolate has completely melted and has a smooth texture.

  3. Remove from heat and stir in raspberry extract

  4. Pour into small bowl and refrigerate for about 1 1/2 hours, or until set.

  5. Scoop tsp of chocolate mix into your hand and roll into a ball shape.

To decorate

  1. Roll in edible glitter to coat.

  2. Place in mini cake cases to give or serve


Dark chocolate and raspberry truffles

  • 400g dark chocolate (roughy chopped)

  • 6 tbsp double cream

  • 1 tsp raspberries (extract)
